Instructions
Wash and hull strawberries.
Mash to desired consistency (I use a food processor for this).
Combine sugar and pectin in a bowl.
Slowly pour sugar/pectin mixture into strawberry puree while constantly whisking. Continue to whisk for 3-5 minutes.
Pour into pint size jars. Let sit on countertop for 30 minutes for jam to set. Clean off top of jar with a damp paper towel. Cover with a clean/sterilized lid and canning ring (no need for sealing with freezer jam).
Store in the freezer until ready to eat, then transfer to the refrigerator.
Notes
TIP**Freezer jam is best poured in pint jars. Makes for easy storage and it’s a great size for when in the fridge so it stays fresh the whole time.TIP** I always double the recipe which makes 2.5 pints of jam. Working in double batches doesn’t compromise the pectin setting and it makes the process go a bit faster. So for the sake of making your life easier, the recipe above reflects a double batch.
