Scotcheroos kind of feel like a secret family recipe over here. A secret recipe that anyone in the world can look up on google and make in 5 minutes. But don’t go searching quite yet, there’s a reason I’m sharing our families version here! There is a small tweak, and I’m telling you, it makes all the difference!
Those of you that know me also know that I don’t like chocolate. But I know I am the minority on this one, so I’m sharing this recipe with you all because you need it. My sister actually made me a whole pan with butterscotch topping for the first time, so that was a treat for me!
Scotcheroos take under 10 minutes to make, and that’s if you are just taking your time. The recipe is fun because it’s one of those that is basically 1 cup of everything. But here’s the secret, are you ready? The original recipe says 1 cup of butterscotch chips plus 1 cup of semi-sweet chocolate chips for the topping. The Clark family recipe? 1 ½ cups of butterscotch chips and 1 ½ cups semi-sweet chocolate chips. That extra thick layer of chocolate/butterscotch on top, it’s the key to taking these to the next level.
These are the kind of treat you take camping, to family reunions, and a backyard BBQ. And here’s another free tip for you – cut them bite size! Then you can just pop one in every time you walk by the plate!

Ingredients
- 1 cup Sugar
- 1 cup Creamy Peanut Butter
- 1 cup Light Karo Syrup
- 6 cups Rice Krispies
- 1 1/2 cups Semi-sweet Chocolate Chips
- 1 1/2 cups Butterscotch Chips
Instructions
- Combine Sugar, Peanut Butter, and Light Karo Syrup in a pan over low-medium heat.
- Stir until the mixture in combined and just starts to bubble. Remove from heat.
- Mix in Rice Krispies.
- Pour into a 13 x 9 pan.
- Melt Semi-sweet and Butterscotch Chips in the microwave in 30 second increments, mixing with a spatula between each time. This should take no longer than 2 minutes total.
- Pour over Rice Krispies mixture. Let cool for an hour or so (or do a quick cool in the fridge), then loosen the Scotcheroos out of the pan and cut into squares.
- Store in an airtight container to keep fresh.

Patricia SiciliaHmmm, this is definitely a peanut butter recipe, so I think something different would totally change it. One idea would be just to make regular rice Krispy treats, then top them with the chocolate/butterscotch combo!

We love these Scotheroos but add 1 1/2 cups of corn syrup and 1 1/2 cups of sugar to 5-6 cup Rice Krispy cereal to make them a little more gooey plus 1 1/3 cup creamy peanut butter. We also prefer Guitard milk chocolate chips mixed with the butterscotch chips. *You do need to cut the bars and space them apart after 30 min. and cover them in a container otherwise they tend to get hard, probably due to the extra sugar.
