Spring is around the corner and this is the perfect time to share this amazing Arugula Burrata salad recipe. It was a hit at my baby shower because not only was it beautiful, it was packed with flavor. One thing I loved was that it had a lot of toppings, so every bite I took had every ingredient in it. Every bite was amazing!
My mom and sisters made all the food for the shower, and I would highly recommend you check out all the recipes here in this post. Micah saw this salad from a friend of hers and recreated it, so we wanted to share the official recipe here so you can make it your own too!
The salad itself is really easy to put together. For the fruit, the girls used a variety of citrus (blood oranges, navel oranges, and grapefruit) along with pomegranate arils. Those different pops of flavor were so wonderful complimented with the Burrata. You could really use any fruit that is in season- raspberries, blackberries, strawberries, mandarin oranges etc. But you cannot substitute the cheese, burrata is key here.
Layers:
Arugula
Balsamic Vinaigrette (drizzle all over the top of the arugula)
Citrus (First slice off both ends of the citrus. Then slice off the peel carefully. Finally, turn the citrus and cut 1/4 inch slices so you have an entire round for presentation. You can also remove the center pulp easily too)
Burrata pieces (With your hands, break the burrata into large pieces and place all over the salad)
Pomegranate arils (sprinkle over the top of the entire salad)
Presentation is important too. A tip for any salad is instead of using a deep bowl, switch to a more shallow option like a large rimmed platter (this is the one they used). That way you get even distribution of salad to toppings. Each person can have an easy serving that includes all the toppings with perfect proportion. Such an easy switch but it makes a big difference, and I would argue it looks way nicer too!

Arugula Burrata Salad with Citrus
Ingredients
- 5oz pkg Arugula
- Balsamic Dressing
- 2 Blood Oranges
- 2 Navel Oranges
- 2 small Grapefruits
- 1 Pomegranate
- 1 tub Burrata
Instructions
- Cut the Citrus. Cut the peel off the top, bottom, and sides of the citrus. Then slice in 1/4" sections horizontally to get citrus rounds.
- Arrange Arugula on a large platter.
- Drizzle Balsamic Vinegar over the top of the Arugula.
- Place Citrus rounds generously all over the salad.
- Break off chunks of Burrata and place in between and overlapping all the citrus.
- Sprinkle Pomegranate Arils over the salad.
- Serve.
