To know my Pastor Al was to love him and same goes for his amazing Stovetop Chicken Tortilla Soup. Try it once and you are hooked!
I do love soups but honestly there are a couple of them that really get me excited and one is Pastor Al’s Tortilla Soup! It’s the warm and savory broth poured over lots of yumminess. This soup is serious comfort food!
Back story: My first children’s pastor (newly hired) was Pastor Al. Scruffy beard, gravelly voice but a heart of gold and enthusiasm for days!! Fast forward a few years and my Mom began teaching at our church’s Christian school. Pastor Al’s office was in the same building as the school so occasionally he would bring in his Tortilla Soup on Friday to treat the school staff. My Mom fell in love with this soup and the rest is history! This family favorite became part of our meal rotation!
The broth simmers for hours and when it’s done you scoop broth into a bowl already loaded with chicken, tortilla chips, avocado, and cheese. The cheese gets gooey as you take a bite and the broth is THE BEST!
Another great thing about this soup is how easy it is to tailor to your family’s likes. Some people love it pretty spicy/hot but I don’t and it’s so easy to adjust and leave out peppers. Plus, the sky’s the limit on ingredients to put in your bowls to serve the broth over! Black beans and corn are a great addition too.

Pastor Al’s Stovetop Chicken Tortilla Soup
Ingredients
- 3 cups Crushed Italian style Tomatoes
- 3/4 cup Dried Onion, minced
- 2 tbsp Dried Parsley
- 3 Beef Bouillon Cubes (or equivalent Beef Broth concentrate)
- 1 tsp Garlic
- 1 tsp Sugar
- 1 tsp Chili Peppers
- 3 Dried Chili Peppers, large
- 6 cups Chicken Broth
- 8 cups Water
Toppings
- Cooked Chicken, shredded or cubed
- Shredded Cheese, Mexican mix
- Tortilla Chips I like them crushed
- Avocado
- Limes
Instructions
- Mix all the ingredients together in a large soup pot.
- Bring to a boil then simmer for 3-4 hours.
- Add toppings into a bowl, then ladle hot broth over the toppings. Enjoy!
