This recipe definitely needs a permanent place to live. Tim’s Coconut Oil Popcorn Recipe is super easy, healthy, and feeds a crowd in under 5 minutes! Popcorn doesn’t need to be reserved just for movie nights. It’s a great after school snack, mid-morning snack, or pack little bags and take it on a car ride for a healthy snack on the go.
Ingredients are key here. Coconut oil is such a great alternative to other oil options. It is full of healthy fatty acids that help improve cognitive function, metabolism, hair and skin health. If you don’t like the coconut taste, please still give it a try. The popcorn does not have a coconut taste at all, it gives it more of a buttery movie theatre popcorn taste (without the heaviness). The Coconut Oil I like to buy is this one. We also use high quality popcorn kernels. We stick to Orville Redenbacher, but any higher quality kernel is great.
Lastly, you need a good sturdy pot and salt to finish it off. Let’s get to the process.
Making the Coconut Oil Popcorn
Get a heavy pot, we have this one.
Heat 1/4 cup coconut oil on medium heat.
Put 2-3 kernels in while the oil is getting hot.
As soon as those first few kernels pop- pour in enough kernels to generously coat the bottom of the pan. Tim says to use 7/8 cup of popcorn kernels. Very particular here.
Put the lid on the pot, and wait! Tim does NOT shake the pot. I like to shake, but Tim says there is no need.
Once the lid is being pushed up by the kernels, pour half of that popcorn out in your bowl while the rest of the popcorn pops.
Salt the first half of your popcorn in the bowl generously while the rest is popping. Once it’s stopped popping consistently, you’re done! Pour the rest in your bowl and salt some more.
You may not think this is important- but everyone should have a good popcorn bowl. The stainless steel commercial ones like this are the best. We have multiple and use them for popcorn, salads, marinating, everything!
I hope you enjoyed Tim’s very particular way of making his famous Coconut Oil Popcorn. If you’ve been here for a while, you know that on Sundays we love to make it a tradition of doing fruit, popcorn, and Monkey Bread. It’s a great way to take a bit of a break from dinner and make it a fun family night. I’d love to hear if you do the same!
