I don’t know about you but when fall begins I’m immediately starting to think about making my favorite soup recipes. There is something about cooler weather and a warm bowl of soup-and especially wonderful if it’s shared with family or friends.
When I was growing up, my parents led a Bible study and each week my Mom would make a huge pot of some delicious soup for everyone (she actually still does)! Her comment was that she especially wanted the single people in their group to get at least one hot, homemade meal a week! Before you knew it, after weeks and months of soup, people were requesting their favorites to be served!
I’ve made a list of 8 of my favorite soup recipes (that I got from my mom) and wow-it was hard to keep it just at 8. I’m going to link the recipe for each soup in case you want to make it!!
1. Smokey tomato and couscous soup

We add small chunks of ham to this soup, and go super minimally on the chipotle peppers (my family doesn’t prefer too spicy) and I can honestly say it’s our family’s favorite soup hands down! Rachael Ray hit it out of the park with this soup!
2. Lemon Chicken Tortellini Soup

This soup became a favorite because I love cheese tortellini pasta! Put it into a soup with chicken thighs and other goodies!
3. Salmon Chowder

My Mom’s most requested soup by our family and others is Salmon Chowder! It’s amazing (I leave out the peas).
4. Prime Rib Soup

Do you love Prime Rib like we love Prime Rib? If the answer is yes-this soup is an amazing way to use the bones and left-over pieces of meat! I know that whenever I buy Prime Rib for a special occasion, I’ll get two meals out of it. Double win.
5. Creamy Chicken and Wild Rice Soup

I’d have to say that if there was a soup that you just KNOW every single person will love-it’s this one! So yummy! I add in carrots, celery, and onion (a Mirapoux) to make it a bit more exciting and yummy.
6. Chicken and Gnocchi Soup

My Mom first made this copycat recipe from Olive Garden! It pairs perfectly with a cold winter night- this soup warms you from head to toe!
7. Traditional Chicken Soup

When someone is sick and you are taking them a meal-this chicken soup is absolutely the way to go! Easy to make and super delicious! Another winner from Rachael Ray!
8. Tortellini Soup with Italian sausage and Kale
Recipe: Modern Proper
This is hands-down a crowd favorite! In fact, it was the first soup we have already made as soon as the weather turned a tiny bit cool!
