I just made this super easy Avocado Corn Salad for my sister’s 40th birthday party! A total hit with everyone and so fresh! Tim says it might even be better than homemade guacamole…which is saying a lot for him!
The ingredients are all healthy and gorgeous colors: fresh corn, grape, cherry, or pear tomatoes, and avocado (the more the merrier!). Adding the lime juice makes it really bright and fresh tasting BUT the raw corn is the star. So sweet with a good crunch!
I’ve included the recipe at the bottom but gather the family in to husk corn for you, dice the avocados, half the tomatoes, and squeeze the fresh lime juice. Add in the other ingredients, mix, and you are ready for any potluck, BBQ, or party!
We eat this salad with our favorite Juanitas tortilla chips (did you know I grew up near where they are made?)! In fact, now that you have me on the subject-touring their chip factory-complete with samples-was probably my favorite homeschool field trip! If I could- I would link the chips for you.
A couple tips:
Be sure to cut the corn off the cob the new way we just discovered (although I’m sure many of you have known this-it’s new to me!) rotating the corn cob and cutting the kernels off lengthwise instead of from top to bottom. Bonus: way less splatter and mess!
Cut the corn, dice the avocado, quarter the tomatoes, lightly chop the cilantro, and squeeze the limes. (I love using my lime/lemon squeezer also and have linked it for you here.) Mix it all together, season with salt to your taste….grab that bag of chips and enjoy yourself!

Avocado Corn Salad
Ingredients
- 2 Avocados large,
- 2 Cobs of Corn, raw
- 1 bunch Cilantro small bunch
- 10oz pkg Cherry Tomatoes
- 1 Lime
- Salt, to taste
- Tortilla Chips Juanitas are our fave
Instructions
- Cut open and dice Avocados.
- Cut Cherry Tomatoes in quarters.
- Roughly chop Cilantro.
- Cut Corn off the cob.
- Mix all the ingredients together in a medium sized bowl.
- Squeeze fresh lime juice over the top. Mix and salt to taste.
- Enjoy with your favorite Tortilla chips!

I made this last night for myself, and I think I am going to make it for our food after service today.
My husband who dislikes avocados said it was delicious! I felt like it was a healthy choice option!
